Lossy, lossless, and the one-way door
WAV and FLAC keep everything. MP3, AAC and OGG throw away what the ear is least likely to notice, in exchange for a fraction of the size.
What is discarded is gone. Converting an MP3 to WAV produces a large file containing exactly the same audio — the detail is not recoverable. Convert from the best source you have, and avoid going lossy twice: MP3 to AAC re-encodes an already-degraded signal and the artefacts compound.
Which format for what
MP3 plays on everything ever made, which is its whole argument. M4A/AAC sounds better at the same bitrate and is what Apple devices prefer. OGG is free of patents and well supported on the web and Linux. WAV for anything going into an editor, where you do not want a lossy generation before you have even started.
