Grayscale is not one thing
Turning colour into grey means deciding how much each channel contributes. Simple averaging treats red, green and blue equally and gives muddy results, because human eyes are far more sensitive to green than to blue. The weighting used here follows perceived brightness, which is why a red apple and a blue mug that looked equally vivid come out at sensibly different greys.
It is also why a photograph that looked high-contrast in colour can come out flat in grey: the contrast was between hues, and hue is exactly what has gone.
Rescuing a flat conversion
Push contrast a little after converting. Colour photographs almost always need it, because the eye was using hue to separate the subject from the background and now has only tone to work with.
Brightness moves everything together and flattens further if overdone; contrast pushes the ends apart, which is usually what a grey image is short of.
Sepia, and when it helps
Sepia is grayscale with a warm tint. It reads as "old" and can lift a portrait that felt clinical in pure grey. It also flattens fine tonal detail slightly, so it suits faces and buildings better than landscapes.

Why does my black and white photo look flat?
Because the contrast in the original was between colours, not tones. Raise the contrast after converting; most colour photographs need it.
Does converting reduce the file size?
Usually a little, since there is less colour information to store, but not dramatically — the format still holds three channels. Run it through the compressor if size is the goal.
Can I get the colour back?
Not from the converted file — the colour information is gone. Keep the original if you might want it.
Is my photo uploaded?
