Where to put them
Bottom centre is the safe default and works whether the document is bound or not. Bottom outer corner — alternating left and right — is what books use, because the number is always at the edge you turn.
Whatever you choose, check it does not land on existing content. A document that already has a footer needs the numbers somewhere else, and there is no way to detect that automatically.
Starting somewhere other than one
Two common needs: skipping a cover page so that numbering starts on the first page of content, and starting at a number other than one because this document continues from another.
Both are separate settings — which page numbering starts on, and what number it starts with. Court filings and bound reports frequently need both.
