The picture is untouched
Removing audio means dropping a stream from the container, not re-encoding the video. So it is fast — a matter of seconds even on a large file — and the picture quality is identical to the original, because those frames were never decoded.
The file also gets smaller by whatever the audio track weighed, typically a few per cent.
When you would want to
Background conversation you did not intend to record. Copyrighted music that would get a video muted or blocked on upload anyway. Footage destined for a presentation where the sound would compete with the speaker. Or simply a clip that autoplays and should not startle anyone.
Muting in a player only affects your playback. Removing the track means it is gone from the file wherever it is opened.
